Redbird's Game Hen Soup "Cornish Hens"

Serves 8-10
Game hen soup is made with Cornish Hens and is a healthy replacement for the fatty chicken soup. It can be made in smaller portions, in less time and is great when you are feeling under the weather. This soup is great as an introduction to a multi-course meal.

The following recipe is for two game hens or the equivalent of one small chicken. A single game hen works just as well if you cut the ingredients in half.

Step 1:
Put two Cornish "game" hens and two full tablespoons of salt with water enough to cover the hens in a large pot. Boil the game hens about 1 1/2 hours or until the breast meat comes easily off the bone. Cook with a lid on the pot. Remove the game hens from the water and cool until you can debone the hens.

Step 2:
While the hens are cooling, dice up the following vegetables and measure the spices:
1/2 Cup Celery
3/4 Cup Green Bell Pepper/Banana Pepper
1 Cup yellow or white Onion
1 Jalapeno Pepper (Like it hot use three.)
2 Cloves Garlic
1/2 Teaspoon Wasabi Powder
1/2 Teaspoon Sage
2 Tablespoons Soy Sauce
1 Tablespoon Parsley Flakes 1/2 Carrot Finely Cut for Color
Dice in "red bell pepper" for color if used for a multi-course meal.

1/4 Cup Brown Rice (Wild Rice can be used.)

Step 3:
Put all of the cut vegetables and spices in the broth and boil for 15 minutes.

Add the deboned game hen meat broken into small pieces.
Add 1 3/4 Cups of White Rice.
Add 1 Quart of Water to the Broth

Cook the soup for an additional 15 Minutes. At the end of the cooking time, throw some ice in it to stop the cooking abruptly to keep from overcooking the rice.

The soup can be eaten immediately or put it in the refrigerator. If you put the soup in the refrigerator and wait until the next day; the rice will absorb the other flavors and it will improve the taste. It lasts several days in the refrigerator.
